The name Savignola is of Etruscan origin and the property was originally a religious complex, built during the first half of the 17 C, that had jurisdiction over the surrounding woods. The wine cellar dates from the 17 C and the original stone vault remains to this day.
In 1780, the Fabbri family bought Savignola. Wine production began with Carlo Fabbri who was mayor of Greve in Chianti for more than ten years at the end of the 19 C and grandfather of the current owner. It was he who planted the first grape vines in the latter half of the 19 C. Some of the original vines have been carefully preserved. However, it is Paolina, Carlo's daughter, who deserves credit for Savignola's real success. Between the two wars, she took care of the estate and gave it its present name. In the 1980s, Paolina's nephew Carlo began to work at her side and when paolina died in 1988, he took over the estate.
Savignola Paolina has been a member of the Consorzio Chianti Classico Gallo Nero since 1924, and now produces about 35,000 bottles of Chianti Classico and a Riserva, plus Il Granaio, an IGT (Indicazione Geografica Tipica). Il Granaio is 85% sangiovese and 15% merlot. This wine is made only in the best harvest years and is aged in French barriques and tonneaus for 12 months.
From Florence take state road 222 (the "chiantigiana"), continue directly through Greve, drive south about 2.5 km and take the turnoff to the left for Lamole. After another 2 km along a beautiful cypress-lined road, about 2.5 km short of Lamole, there is another turnoff to the left with a signpost for Savignola.
From Sienna on state road 222, after passing through Panzano, take the turnoff to Lamole on the right, 2.5 km before Greve, and continue as above.
